British Virgin Islands’ Scrub Island Resort Names New Executive Chef

The Scrub Island Resort in the British Virgin Islands has named Michael Wedderburn as the property’s new executive chef.

Scrub Island also announced the appointment of Katie Rowles as the resort’s new executive sous chef.

Wedderburn, a native of Jamaica, will oversee the resort’s three primary restaurants, including Caravela, Tierra!Tierra! and One Shoe Beach Bar & Grill.

A 25-year veteran of the industry, Wedderburn has served in posts around the world, including stops at Ritz-Carlton resorts in Atlanta, Sarasota and Amelia Island, Fla.

He has also served as the executive sous chef at the Hershey Lodge in Hershey, Penn.

Rowles, a native of England, will plan and direct food preparation and manage kitchen staff, along with other duties.

“With their vast experience and varied skill set, Michael and Katie will make a great addition to our exceptional culinary team at Scrub Island Resort,” said Anura Dewapura, Scrub Island Resort managing director. “Michael will use his expertise in utilizing only the finest available premium ingredients to dazzle our guests and enhance their dining experience at the resort, while Katie will also to revamp our Gourmet Market including the addition of a European style bakery.”
