How to Make a “Polar Vortex” Rum Cocktail

How to stay cool in the tropics

While most parts of North America are currently feeling the chill of record low temperatures, the ice that guests of Nevis’ Nisbet Plantation Beach Club are seeing is of a distinctly different sort.

That’s because it’s the crushed ice in the resort’s newest rummy cocktail, the Polar Vortex. Particularly appropriate at this time of year, the concoction combines coconut rum, Curaçao liqueur and tequila in a cerulean sip that brings new meaning to the term “winter blues.”

Nisbet Plantation Beach Club’s Polar Vortex

Ingredients

2 ounces coconut rum

1 ounce gold tequila

1 ounce Curacao liqueur

3 tablespoons coconut cream

1 large lime, juiced

2 scoops crushed ice

coconut flakes

twist of lime

Method

Combine all liquid ingredients in a shaker with ice; shake well. Dip rim of a martini glass into coconut flakes, then pour in the contents of the shaker. Garnish with twist of lime (and other fruit, if desired). Enjoy. (Above photo by Tina Thuell Photography).
