Caribbean Plate: Le Ti Maki in Gosier, Guadeloupe

GUADELOUPE – It may be in the heart of Gosier in Guadeloupe, but Le Ti Maki’s kitchen extends as far as the Indian Ocean.

The eatery, the brainchild of mainland France native Prune Le Corre, is a survey in the breadth of French cooking — and the wide-ranging flavours of the French territories and departments.

Set in a small storefront location near the Casino du Gosier, Le Ti Maki (Maki is a French word for Lemur) is a relaxed, unpretentious eatery with simple, stellar food (and free Wi-Fi, something of a rarity in the town).

The restaurant is a newcomer to Gosier, having only opened in July (Le Corre found the space just two days after arriving in Guadeloupe).

She describes the cuisine as a mix of “traditional French,” the food of the Indian Ocean and “family food.”

The last one is a natural — Le Corre, who spent some of her childhood in Guadeloupe, came to the archipelago to join her mother and grandmother.

We tried Le Ti Maki’s signature dish, a Fricassee of Lamby (conch), served with banana mash, creole sauce, with lentils prepared in the Reunion Island style.

All were executed perfectly.
