Rum Journal: A Palomino Adventure From Puerto Rico’s El Conquistador

As temperatures start to drop and fall takes hold we can’t blame you for wanting to extend summer just a little bit longer. But while we can’t control the seasons we can offer you this recipe from Puerto Rico’s El Conquistador, a Waldorf Astoria resort, where they serve this coconutty cup of Caribbean on their private offshore retreat, Palomino Island. Giddy up!

El Conquistador’s Palomino Adventure

Ingredients

1 ¼ ounces light Puerto Rican rum

¼ ounces coconut-flavored Puerto Rican Rum

2 ounces cream of coconut

1 ounce fresh coconut water

1 ½ ounces lime juice

1 cup crushed ice

4 mint leaves

Method

Pour rum, cream of coconut, lime juice, coconut water and mint leaves into a blender with crushed ice. Blend until smooth, and pour into a glass garnished with mint leaves and a cherry. Salud!
