The Bahamas’ Cove Eleuthera Resort Has a New Culinary Team

One of Eleuthera’s top resorts has named a new culinary team: the South African husband-and-wife duo of Bryan and Louise English. 

Bryan English served most recently as executive chef at the One&Only Rwanda; Louise’s career includes stops at the Mia resort in Vietnam and the One&Only Gorillas Nest in Rwanda. 

The pair will lead the resort’s dining outlets, including the Freedom Restaurant and Sushi Bar and the Gregory Town Grill.

“We are pulling as much inspiration from the flavors and culture of the destination as we can into our menus,” said Bryan English. “Guests will find tropical fruit, such as pineapple; local seafood, such as conch and fresh-caught filets for sushi; and jerk spices, which are common throughout the region.”

The pair says it will focus on bringing a more “balanced” menu to the resort, by incorporating more variety and adding new, healthier options. 

That’s along with a renewed push to hire locally. 

“We know that our local staff has the knowledge when it comes to traditional Bahamian dishes and ingredients,” Bryan said. “It is our hope to inspire our staff to share their expertise, passion and opinions when it comes to the new menus.”
