This Top Chicago Restaurant Is Expanding to Paradise Island

Since 2005, Carnival has been one of the top culinary hotspots in Chicago, with a mix of Pan-Latin fare and hand-crafted cocktails. Now it’s coming to The Bahamas. 

The first-ever Caribbean outpost of Carnivale is opening next year at the new Hurricane Hole Superyacht Marina on Paradise Island, a 15,000-square-foot eatery with a Bahamian twist. 

“At the new Carnivale Bahamas, every dining experience will be unique, full of incredible food and flavors, in a colorful and romantic ambience, with the hottest music playing both indoors and outdoors,” said Bill Maroitz, co-owner of Carnivale. 

The new eatery will celebrate local cultures, flavors and cuisines, the team says. 

Carnivale’s owners say the Bahamian location will focus on local inspiration.

“We are going to be incorporating elements that are native and beloved by Bahamians,” said co-owner Jerry Cataldo. 

The $10 million project will be the latest in a growing portfolio of celebrated eateries on Paradise Island, complementing the buzzing dining scene at nearby Atlantis Paradise Island. 

Indeed, the signature Bahamian resort has been adding a number of eateries by top international chefs, from the soon-to-debut Mediterranean eatery by Alon Shaya to Chef Michael White’s Paranza

Carnival will also provide another top-flight cocktail bar for the island, joining the celebrated new Dilly Club at Atlantis’ Marina Village. 

“Carnivale’s ambience will be second to none. The restaurant will be fun and entertaining from the moment you walk in the door to the moment you leave,” Marovitz said. “Music, including live concerts, will be an important element of the restaurant. Guests can expect the best food, service, and atmosphere when they come to Carnivale.”
