Another Star Chef Is Opening a Restaurant at The Bahamas’ Atlantis

By: Caribbean Journal Staff - April 24, 2023

The Bahamas’ Atlantis Paradise Island resort is quickly becoming one of the world’s top culinary destinations.

The resort continues to attract superstar chefs from around the world, from Nobu Matsuhisa to Jose Andres and, more recently, Michael White

Now, the Paradise Island destination is adding another culinary luminary: Israeli Chef Alon Shaya, who is opening the new Silan restaurant.

The newest eatery is the brainchild of Pomegranate Hospitality, led by Shaya and his wife, restaurateur Emily Shaya. It will feature a fusion of “Israeli heritage and Caribbean blends,” with signatures like creamy whipped hummus with tahini, borekas with everything bagel spice and za’atar fried chicken, among others.

The multiple-James-Beard Award-winning Shaya will be debuting a menu preview of Silan, which means “date syrup” in Persian, this summer, followed by an official opening of Silan at Atlantis in 2024.

“Chef Shaya brings a remarkable perspective and opportunity to showcase the unique elements of the Bahamas through a new lens,” says Audrey Oswell, President and Managing Director of Atlantis Paradise Island. “We are excited to have his incredible talent and contemporary Mediterranean cuisine at Atlantis, which I know will be embraced by our guests and the local community.”

The native of Israel, who was raised in Philadelphia and now operates in New Orleans, is best known for eateries like Saba, Miss River and Chandelier Bar in New Orleans, along with Safta in Denver.

“We are impressed by Atlantis Paradise Island’s commitment to cultivating exceptional culinary experiences,” says Chef-Partner Shaya. “New Orleans is often called the northernmost Caribbean port. Now, with Silan, we’ll delve into the local bounty of the Caribbean even further to showcase bright and vibrant Bahamian ingredients and flavors that intertwine so well with the cooking of my Israeli heritage.”

Atlantis continues to push the envelope in its culinary offering, timed for the 25th anniversary of its iconic Royal Towers.

That includes the recent debut of the exciting new cocktail bar at the Marina Village, the Dilly Club

Silan, which will be located at the heart of the Royal Towers, will undergo a complete renovation by Alexander Waterworth Interiors, which designed Miss River.
