The Ocean Club’s Newest Executive Chef Is a Native of Nassau

One of the Caribbean’s most iconic resorts has named a new executive chef, Caribbean Journal has learned.

The Ocean Club, a Four Seasons Resort on Paradise Island in The Bahamas has named Nassau native Lester Dean as its new top chef.

Dean had already worked for nearly 16 years at the resort; he was most recently the executive chef at the Margaritaville Resort in Nassau. He has previously been the Chef de Cuisine and Senior Executive Sous Chef at Jean-Georges’ signature eatery at the Ocean Club, Dune.

“I’m thrilled that Lester Dean has returned back home to The Ocean Club,” says John Conway, General Manager of the resort. “He knows our property and our team and knows the quality we strive to deliver. I am excited for Chef Dean to represent The Ocean Club as Executive Chef and know guests and locals will take notice of his culinary passion and talent.”

Dune is marking its 25th anniversary this year.

“I always wanted this Executive Chef role at The Ocean Club,” Dean said. “However, in hindsight, I think leaving was what I had to do, because I learned so much operationally. From licensing to contracts and everything about opening a resort, I stepped out of my comfort zone.”

“I’m a foodie, so I enjoy all cuisine, but I really like brunch,” Dean notes. “You can explore a lot of different flavours. Items such as carrot cake pancakes and oxtail tacos, for example. I look forward to energizing DUNE’s popular Sunday brunch.”

We’ve always loved the Ocean Club and have stayed at the property countless times; it remains one of the great resort experiences anywhere in the Caribbean.
