A New Executive Chef at the Grand Residences Riviera Cancun

By: Caribbean Journal Staff - October 20, 2021

The Grand Residences Riviera Cancun, one of the leading luxury resorts in Mexico, has named a new executive chef.

The 144-suite Puerto Morelos property, which is part of Wyndham’s new Registry Collection, has named Guide de la Mora to the role.

He will be leading a host of new culinary projects, including a new onsite local produce garden and new menus.

“Travelers are eager to get back to exploring the tastes and traditions unique to regions of areas around the world and Mexico, Puerto Morelos in particular, has so much to offer,” said Daniela Trava Albarran, General Manager of  Grand Residences Riviera Cancun. “Through welcoming Chef Guido de la Mora along with his initiatives on how to elevate the culinary journey for each guest during their stay, we are able to provide a hands-on cultural engagement via food.”

The new menus include both traditional and Yucatan-inspired dishes, along with the addition of new tasting series from a local cacao farmer.

“The wide range of flavors, colors, and tastes of the ingredients found along the Yucatan peninsula offers a deeper and yet lesser-known connection to the authenticity of the region,” de la Mora said. “Our new dining options and immersive culinary activities will introduce guests to Mexican dishes and traditions like they have never tasted before.”
