This Is Nassau’s Must-Try Cocktail

So you’ve already tried conch salad and guava duff. But there’s another local specialty you can sample the next time you’re in the Bahamas.

Sky juice is a popular cocktail in the 700-island archipelago, a creamy concoction made with an unlikely (but delicious) combination of gin, coconut water and condensed milk, spiked with a spiced sugar syrup.

Chances are you’ll find sky juice at any Bahamian bar or restaurant, but we’re fans of the potent potable served at Lukka Kairi. The waterfront eatery next to Nassau’s Pompey Square makes its sky juice exclusively with premium Bombay Sapphire gin and uses a house-made blend of sugar, cinnamon and nutmeg to sweeten the deal.

“One just isn’t enough,” bartender Delano told me as he proudly presented my mason jar of sky juice, topped with curls of toasted coconut shavings.

I took one sip and instantly agreed.

Ingredients
1½ shots Bombay Sapphire gin
1½ ounces coconut water
1½ ounces condensed milk
½ shot sugar syrup (spiced with a dash of cinnamon and nutmeg)

Method
Pour all ingredients into a cocktail shaker half-filled with crushed ice. Shake vigorously. Pour into a tumbler and enjoy.
