Le Sereno St Barth’s Names Jean-Louis Brocardi New Executive Chef

The Le Sereno hotel in St Barth has named Jean Louis Brocardi as the new executive chef at the property’s signature Le Restaurant des Pecheurs.

Brocardi, a native of Marseille, will helm the restaurant using “traditional french flavours prepared with a Mediterranean flair,” according to the hotel.

Le Sereno said Brocardi’s “passion for sustainable food practices” would further the restaurant’s “sea-to-table” dining experience with a focus on using offerings from the island’s local fishermen.

Brocardi’s previous culinary work includes senior restaurant positions as Executive Chef of L’Absinthe Brasserie in New York, Palette Group in Colombia, the Madison Hotel in Washington and the Hotel Le Beauvallon in Saint Tropez.

Le Sereno’s former Executive Chef, Jean Luc Grabowski, departed Le Sereno to pursue endeavours working with culinary students in Haiti, although the property said he would “remain close to the Le Sereno family.”
