Considering the hotel’s name and the fact that it has six bars (one of which is dedicated exclusively to rum) it shouldn’t come as a surprise that this coconut rum-cocktail is one of the most popular at St Lucia’s Coconut Bay Beach Resort & Spa. Blend up a batch for yourself and you’ll soon understand why drinking anything else would be … well … nutty. 

Ingredients

1 ounce         coconut rum

1 ounce         Blue Curacao

1 ounce         Amaretto

1 ounce         coconut cream

1.5 ounces    milk

1 cup              ice

Method

Blend all ingredients together and frothy. Pour into a tall glass, garnish with a cherry and enjoy.
