The Caribbean’s Coolest New Food Truck Just Opened in Saint Martin
It’s got all of the essential ingredients: a young, energetic team of chefs; a plum perch in one of the region’s foodie capitals; and a bold, innovative menu.
This is the coolest new food truck in the Caribbean, and it’s the newest addition to Saint Martin’s culinary capital in Grand Case.
It’s called Memento, and the idea is unforgettable, irreverent food — and a menu you may not expect.
Think mahi tartare with yuzu; fish burger; and even a “mahi roll,” a sort of French Caribbean spin on a New England lobster roll.
There’s also an assortment of croqs (hot sandwiches) with ingredients like guacamole, red onions and mango; or brie with stone-ground mustard and caramelized shallots.
You can also choose from a range of tapas like falafel, French fries, Spanish-style patatas bravas and mahi rillettes.

It’s a fun, eclectic menu that fits right in with the Caribbean’s most delicious street, Grand Case Boulevard.
The seating is sparse, making for a wonderfully intimate experience, equal parts food truck and food stall.
It doubles as a bar: you can order a classic Rosé, a white wine or even a ti’ Vieux (a ti’ punch with aged rum instead of rhum blanc).

But it almost didn’t happen.
Chefs Emma Huve and her partner Lucas Chauvin were planning on coming to Grand Case to work in a restaurant.
Two weeks before their flight, they saw an ad.
“We just saw this truck for sale on Facebook and we had a crush on it,” she told Caribbean Journal. “Two weeks before we got here, we changed our mind.”
