There’s a New Eatery at the Ritz-Carlton Reserve in Puerto Rico

Puerto Rico’s Dorado Beach, a Ritz-Carlton Reserve resort has opened a new Italian eatery this summer, Caribbean Journal has learned. 

The new Flor de Sal is all about salt: the restaurant will feature salts from around the world: Bolivian Rose Salt from the Andes; Halit salt; Kala Namak Salt from India; Sale Marino salt from Italy; and local Puerto Rican salt from Cabo Rojo.

The aim is to “celebrate the complexity of salt, using it as a transformative element that elevates the flavors to new heights.”

That will range from salt-cured grouper to Himalayan-salt-finished Piedmontese bone-in ribeye, with a culinary team led by Chef de Cuisine Rollyn Angela and Sous Chef Alan Avila. 

Also on offer will be a cocktail program by mixologist Valentino Longo, with the drinks also “expertly blending” the use of salt. 

The new-build oceanfront eatery is set across two different spaces: a bar and lounge area and aa retstauarnt with al fresco dining.
