Puerto Rico’s Newest Hotspot Is an Oceanfront Eatery From a Michelin-Starred Chef
San Juan has always had one of the most exciting food scenes in the Caribbean, with a dynamic culinary movement that’s catapulted a number of chefs to stardom, from Jose Enrique to Mario Pagan. And now Puerto Rico’s capital has a major new restaurant from full-fledged superstar: Chef Michael White.
The legendary Michelin-starred, James Beard Award-winning chef has officially opened his newest Caribbean restaurant at the La Concha resort in Condado.
It’s called Levant, and it’s a Mediterranean fusion spot with a focus on local produce and fresh seafood: think dishes like bluefin tuna crudo, fusilli with red wine-braised octopus; and a selection of mezze.
It’s the result of years of travel for White across the Mediterranean, and, in keeping with all of his eateries (including his other regional restaurant, Atlantis’ Paranza, which we’ve eaten at several times and thoroughly enjoyed), has an impressive wine list, with more than 400 different expressions.

White says Levant is a “one-of-a-kind coastal dining experience,” with “Mediterranean flavors paired with Puerto Rico’s local bounty.”
White has six Michelin stars in all, beginning with the flagship Marea.
The debut is part of an overhaul of the classic San Juan resort, which will soon be joining the Autograph Collection.
“Levant is a testament to La Concha Resort’s commitment to elevating the guest experience in Puerto Rico. As a company, we are always striving to enhance the island’s culinary scene, and partnering with Chef Michael White allows us to offer an exceptional dining experience that seamlessly blends innovation with tradition,” said Rolando Padua, President of Paulson Puerto Rico, which owns the resort. “Set in our iconic restaurant space, with more than 65 years of history, this new concept embodies the sophistication and energy of La Concha, bringing a world-class gastronomic journey to our guests and the local community.”
