How to Make a “Royal Mojito”

This classic mojito comes from the Croquet Bar at Puerto Rico’s Royal Isabela, where bartender Héctor Guzmán Román serves it to patrons who appreciate the full, fresh flavor of the organic limes and mint, grown on the sprawling resort’s 426-acre farm. Alcoholic and organic: what’s not to love?

Royal Mojito

Ingredients

4 lime wedges

5 mint leaves

1 ounce sugar syrup

1.5 ounces of Puerto Rican White Rum (Royal Isabela prefers Don Q Cristal)

lemon-lime soda

Mint sprig for garnish

Method 

Place two lime wedges in a highball glass and use a muddler to crush the lime to release the lime juice. Add sugar syrup and two mint leaves (rub leaves in your hands to release the mint oils). Do not strain. Fill the glass almost to the top with ice, alternating with remaining lime wedges and mint. Pour rum over ice, fill glass with lemon-lime soda, and then stir. Garnish with mint sprig and enjoy.
