Rosewood Mayakoba’s New Restaurant

Rosewood Mayakoba has announced what it calls a new restaurant “concept” at the resort property on Mexico’s Caribbean coast.

La Fondita is located in the recently opened El Pueblito, a “replica” of a Mexican village square within the wider Mayakoba resort.

The new eatery is overseen by executive chef Juan Pablo Loza, who is also responsible for the property’s Casa del Lago, Agave Azul and Punta Bonita eateries.

La Fondita has a focus on authentic Mexican cuisine, with a variety of tostadas along with soda mescal, beer or aqua fresca.

“I relished the opportunity to design the concept of La Fondita and reintroduce the indigenous flavors of Mexico back into the menus of Casa del Lago, Agave Azul and Punta Bonita,” Loza said. “It allowed me to combine my passion for cooking with regional ingredients and Rosewood Mayakoba’s tradition of offering guests the best of Mexican cuisine.”

The restaurant changes are part of a $3 million recently-completed enhancement project.
