In the Caribbean you don’t need snow or chilly temps to put us in a festive mood.

Instead, you can get your holiday spirit the island way: with actual spirits!

So as we celebrate the season we’re sharing with you a rummy recipe created in another nearby tropical clime, Miami, by cocktail and bartending consultant Freddy Diaz, using Barbados’ own Mount Gay rum.

With fig puree and balsamic vinegar it’s a refreshing take on a traditional winter warmer. Happy Holidays!

Nieve Negra

Ingredients
1.5 ounces Mount Gay Black Barrel rum
½ ounce balsamic vinegar
¼ ounce lime juice
¼ ounce light agave
1 teaspoon fig puree
dash orange bitters

Method

Shake lightly with ice. Strain over ice cubes into an old fashioned glass. Garnish with a flaming orange peel. Be merry.
