New Chef at Viceroy Riviera Maya

The Viceroy Riviera Maya has named Paloma Carvajal its new Chef de Cuisine, the property announced.

Carvajal will oversee the property’s restaurants including La Marea and Coral Grill.

Carvajal’s previous experience includes stints at the El Chafin restaurant in Madrid (and its sister restaurant, El Mirador de Juan Pablo), among others.

She most recently served as kitchen supervisor at the Capella Resort & Spa Ixtapa, also in Mexico.

The all-villa resort is one of three Viceroy properties in the Caribbean, along with resorts in St Lucia and Anguilla.

The company announced earlier this summer that it would be opening another Caribbean property at a former convent in the city of Cartagena, Colombia.
