Rum Journal: How to Use Cucumber in a Rum Cocktail

THE LATEST edition Rum Journal continues our quest for rum and rum culture in all corners of the globe.

That includes finding great cocktail recipes in every place that loves rum, and this one is particularly detectable.

It comes to us from the Jupiter Beach Resort & Spa in Jupiter, Fla. and the property’s signature Sinclair’s Lounge.

While you may be familiar with gin-based cocktails utilizing cucumber, it works quite well with rum, too, making for a refreshing, crisp cocktail.

Here’s the recipe for the resort’s Cucumber Breeze.

Ingredients:

2oz Bacardi Rum
2oz Simple syrup
Fresh Squeezed Lime Juice
Splash of Pineapple Juice
2oz Peeled cucumber

Method:

Muddle the cucumber with the simple syrup, add the remaining ingredients, shake well, then strain over ice. Add a splash of sprite.
