Chef Marcus Samuelsson to Open Pop-Up Restaurant in Bermuda

Noted Chef Marcus Samuelsson will be opening a pop-up restaurant at the Fairmont Hamilton Princess hotel in Bermuda.

Samuelsson will be opening the eatery for a two-month period lasting from June 3 to Aug. 3; it will serve as a preview of his new signature restaurant which will open at the hotel in May 2015.

Chef de Cuisine Leo Marino and Chef de Cuisine Justin Levine, both of whom come from Samuelsson’s Red Rooster HArlem restaurant, will be executing the menu at the restaurant.

The pop-up eatery will be called Samuelsson at HP.

“I’m excited to create new flavors inspired by the rich, vibrant culture and history of Bermuda,” Samuelsson said in a statement. “From fresh-caught, local fish to an array of Caribbean and Portuguese ingredients and traditions, there is such a wealth of inspiration to bring to the table.”

The property said Samuelsson’s menu would “highlight fresh seafood and local flavors to emphasize the restaurant’s warm, seaside location and the culture of Bermuda,” serving dishes like Rockfish Crudo with pickled cherry tomato, radishes and jalapeño oil; and small plate appetizers like Fish Chowder Croquettes with rum aioli.

Samuelsson, who was born in Ethiopia and raised in Sweden, owns the Red Rooster Harlem restaurant in New York and a speakeasy, Ginny’s Supper Club.

“To have Chef Samuelsson join us in bringing to life our vision for the signature Gazebo restaurant in truly an honor,” said Andrew Green, whose family owns the hotel. “We are very excited to introduce the chef and his exceptional and unique cuisine to Bermuda. As plans for the new restaurant unfold, we look forward to sharing those details.”

Samuelsson’s eatery is part of a wider $90 million renovation at the hotel that includes a new restaurant, a new infinity pool and a new marina, among other changes.
