Nevis’ Montpelier Plantation & Beach Adds Second Executive Chef

The 19-room Montpelier Plantation & Beach has named a second executive chef for the Relais & Chateaux property.

Paolo Sari, a Relais & Chateau executive chef from the Monte Carlo Beach in Monaco, will serve as co-executive chef with current Executive Chef Benjamin Boisin.

The two will be working side-by-side for the winter season, from Dec. 12 to Jan. 25.

“We are thrilled to have Chef Paolo as part of our team,” hotel owner Tim Hoffman said in a statement. “Chef’s commitment to organics and his holistic approach to cooking make him perfectly positioned to execute our culinary vision alongside Chef Benjamin.”

The hillside property in Nevis has three restaurants: Restaurant 750, Mill Privee and Indigo.

“Our goal is to delight guests with food that entertains through its presentation and nourishes through the careful selection of organic produce and sustainable proteins,” Hoffman said. “This is going to be a wonderful opportunity for the chefs to exchange ideas, passion and skills and introduce new signature Euro-Caribbean creations to our guests.”
