Elite Island Resorts Names New Executive Chef

ANTIGUA — One of the Caribbean’s top resort companies has a new executive chef.

Elite Islands Resorts, which has a portfolio of seven resorts in the Caribbean, has named culinary veteran Chef Eric Scuiller its new executive chef.

Scuiller has begun by working at the St James’s Club in Antigua as part of his initial tour across the company’s regional properties.

For now, Scuiller says he plans to introduce a renewed emphasis on local flavours, with the idea of using local tastes and products to put new spins on traditional dishes.

Instead of a pasta bolognese, he told CJ, the idea might be to substitute ground-up locally caught conch with an arugula-green pasta, for example.

Scuiller, a native of Brittany, comes to the company with decades of experience in the region’s top hotels, including as pre-opening/opening executive chef for the Ritz-Carlton Grand Cayman, executive chef at the Beverly Hills Hotel and as executive chef at 12 Club Med resorts around the world, among other stops.
