A New Culinary Program at the Hyatt Regency Aruba

The Hyatt Regency Aruba is getting a new dining program, following the appointment of Chef Yvan Didelot as its new director of culinary experience and food and beverage operations. 

Didelot will serve as “both a chef and a leader” to elevate the resort’s gastronomic and mixology offerings. 

That will include a significant focus on the Ruinas Del Mar restaurant, the hotel’s signature eatery, along with cultivating new flavors for food and beverages throughout all of the property’s restaurants. 

“We are thrilled to welcome Yvan Didelot to our valued team. With his impeccable background, creativity, and passion he is certain to inspire greater guest experiences and flavors in our renovated bars and restaurants. We are confident he will support and complement new food and beverage trends in Aruba and infuse them into our offerings,” said Gabriel Castrillon, General Manager of the Hyatt Regency Aruba Resort Spa and Casino. “Our culinary experiences will expand and support the efforts of Aruba hospitality where the resort will partner with the best celebrity chefs on the island. Yvan is the perfect addition to our property and to the entire gastronomical experience of Aruba.”

A native of France, Didelot has a Michelin pedigree, including working in Michelin-starred restaurants like the one-star La Coupole, and the one-star Chateau de la Chèvre d’Or in France.

He also trained under the legendary three-star Chef Paul Bocuse, one of the godfathers of French modern cooking. 

“My family and I are delighted to make Aruba our new home,” Didelot said. “I have always been drawn to the region and its flavors have inspired many of the dishes I create. I am delighted to work alongside a group of exceptionally talented people who are passionate about the island and the role we play in Aruba’s culinary scene.”
