Saint Lucia’s Anse Chastanet Debuts Vegan Eatery

One of Saint Lucia’s top hotels has launched a new program specifically for vegan travelers.

Saint Lucia’s Anse Chastanet hotel has transformed the menu at its popular Emeralds restaurant from what was vegetarian to what is now 100 percent vegan.

For the uninitiated, vegan means no animal or animal byproduct ingredients are in the food, even eggs or milk.

“We saw an increasing demand for vegan meals from our guests, so we thought why not develop this concept and make it part of our dining experience,” explained Karolin Troubetzkoy, Executive Director of Marketing and Operations of the award-winning Caribbean resort.

While all of the eateries at Anse Chastanet serve vegetarian and vegan-friendly choices, Emeralds will now cater exclusively to vegans.

Menus include everything from crispy cauliflower accras with lime and scallion to Saint Lucian mango chutney and breadfruit gnocchi.

The menu is the brainchild of leading chef Allen Susser, in collaboration with the vegan chef de cuisine at Anse Chastanet, Frank Faucher.
