Who’s Leading the Bar Program at Cayman’s Kimpton Seafire

The highly-anticipated Kimpton Seafire Resort in Grand Cayman is opening in November, and it’s already tabbed its new beverage manager.

Kimpton veteran John Stanton will be leading the bar program at the property, joining the resort from Sable Kitchen & Bar in Chicago, where he had been head bartender.

“I am excited to further my career with Kimpton and look forward to joining the culinary community of Grand Cayman,” Stanton said. “With a focus on celebrating the best ingredients the island has to offer, I hope to create a bar program that both locals and resort guests will enjoy.”

Stanton has been one of Chicago’s top bartenders for some time, beginning at a dive bar called the Hungry Brain and helping to open Sable.

He will be overseeing the bar program at three dining venues at Seafire: Ave, the Mediterranean-inspired eatery; Avecita, a “chef’s bar” and Coccoloba, a street-taco stand.

The hotel said the plan was to create “handmade cocktails infused with local Caymanian flavors.”
