St John’s Caneel Bay Resort Has a New Executive Chef

St John’s Caneel Bay has named a new top chef.

The property has announced the appointment of Nicholas Arnold as its new executive chef; Arnold had previously worked at the property from 2000 to 2002 as Garde Manger Chef.

Arnold will be responsible for all dining operations, menu creation and ingredient procurement for the resort’s Turtle Bay Estate House, Caneel Beach Terrace, Caneel Beach Bar and Grill and Cannella eateries.

“Arnold infuses his menus with healthy, nutrient-rich, and eminently flavorful food – cooked with integrity and the freshest possible ingredients,” the property said in a statement. “He is always looking for opportunities to infuse his cooking with Caribbean techniques and history.”

The hotel said Arnold was sourcing local mahi, lobster, mango and arugula, among other ingredients, and all of the seafood he usesspends no more than 48 hours out of the water.
