The Calabash Cove Resort and Spa in St Lucia has announced the appointment of Thierry Lazarus as Executive Chef.

In this capacity Lazarus will lead the culinary team at Windsong, the hotel’s ocean-view restaurant, and all culinary offerings ranging from beach and pool menus, to in-room dining, to special events including private dinners and weddings, the hotel said.

“Chef Thierry brings a healthy, locally-infused approach to our menus,” said Konrad Wagner, Managing Director of Calabash Cove. “His recipes perfectly blend the spirit of French decadence, local spice and the comfort of familiar, fresh foods.”

Lazarus joins Calabash Cove with over 25 years of experience in the culinary industry, including positions at top-rated hotels in Europe as well as other boutique and chain restaurants in the Caribbean.

“Calabash Cove’s boutique size allows me to work closely with local farmers and change menus based on what is ripe and ready to prepare,” said Chef Thierry Lazarus, who also has an herb garden at the hotel. “I will be creating seasonally-evolving menus that feature mouth-watering dishes that showcase local flavors and foods, as well as offering innovative vegetarian dishes and classic favorites for our guests.”
