Rum Journal: The Frangipani Beach Resort’s Island Passion

ANGUILLA is one Caribbean island we’re particularly passionate about so this rum cocktail, served at the bijoux Meads Bay boutique hotel Frangipani Beach Resort, couldn’t be more appropriate. Created by Kerry Warrington, the affable and award-winning barkeep at the resort’s restaurant, Straw Hat, it’s a classic rum punch combo of sour, sweet, strong and weak. And although its best enjoyed in a Caribbean setting, we’re mixing up a tumbler (or three) here in Miami as we plot our Anguillian adventures for the year ahead. Cheers!

Island Passion

Ingredients
1.5 ounces vodka
½ ounce gold rum
2 ounces pineapple juice
1 ounce passionfruit puree

Method
Shake all ingredients together with ice. Pour into a tumbler and garnish with a cherry and pineapple stalk.
