Rum Journal: A Sweet Memory of St Lucia’s Ladera Resort

I HAVE fond (albeit fuzzy) recollections of this citrus-spiked creeper from a trip to St Lucia’s Ladera resort a few years ago.

As I gazed at the Pitons ­– which, from my mountaintop perch at the resort’s Tcholit Bar seemed almost close enough to touch – the low-hanging sun cast a golden glow and contented murmurs from the cosmopolitan crowd gathered to celebrate the sunset filled the air.

I recall thinking how lucky I was to be there, in the midst of all that beauty.

Now, back in Miami, whenever I whip up a batch of this St. Lucian Fantasy, my reality is sweetened by the sun-drenched memory.

Dasheene Fantasy

Ingredients

2 ounces white rum

1 ounce orange Curacao

3 ounces orange juice

½ ounce lime juice

crushed ice

 

Method

Shake all ingredients together. Pour into a highball glass. Enjoy.
