MARTINIQUE — This is Rhum Agricole country, meaning that in Martinique, there is one cocktail to rule them all: the Ti’ Punch.

But here in Sainte-Anne at the southeastern corner of Martinique, you can still find one of the Caribbean’s most famous cocktails: the Mojito.

It’s here, in the tiny town of Sainte-Anne, where you can find the mojito in one of its best incarnations.

At the charming waterfront hotel-bar-restaurant called La Dunette, run by Gerard Kombona, whose long hospitality career included a stint at the famous Essex House in New York City.

The mojito is made faithfully: mint leaves, sugarcane syrup (this is Martinique, after all), lime, rum.

The verdict? Superb — a Mojito as it was intended, with the Havana Club adding the kind of dry but brash flavour only a Cuban rum can.

Of course, the Caribbean sunset doesn’t hurt, either.
