St Lucia will soon be getting its first-ever pop-up restaurant.

Chef Craig Jones of the Cap Maison resort’s Cliff at Cap restaurant will be creating St Lucia’s first pop-up eatery, with a series of Pop-Up at Cliff dinners on a bluff on the east coast of Cap Estate, the company announced Thursday.

So-called “pop-up” temporary restaurants have become increasingly popular in cities such as New York and Paris.

Cap Maison also announced the expansion of its Cliff Bar, with 14 new seats at the property. The Cliff at Cap restaurant has additionally received an expansion in seating capacity, the resort said.

The expansion comes after the unveiling of the resort’s new Rock Pool, a natural rock pool filled with sea water.

The hotel is located on the 1,500-acre Cap Estate on the northern tip of St Lucia.
