George Town, Grand Cayman Is Getting Its First Luxury Hotel
George Town has always been the beating heart of Cayman Islands — a compact waterfront capital defined by its financial core, lively harbor and its role as the island’s front door. But it’s never really been a place to stay. That’s about to change.
Early next year, the city will welcome its first full-scale luxury hotel, a contemporary retreat that’s set to shift the center of gravity on Grand Cayman. ONE | GT isn’t just another resort — it’s the first property to bring the language of modern hospitality into the heart of the capital, and its arrival signals a new chapter for the island’s most historic neighborhood.
The hotel rises quietly on Goring Avenue, a sleek, understated building framed by palm trees and steps from the waterfront. Its rooftop terrace sits high above the city, opening onto broad views of the Caribbean Sea and the harbor. The design takes a clear stance: polished lines, wide-open public spaces and a sense of ease that’s more cosmopolitan than coastal cliché. For an island known for its resorts along Seven Mile Beach, it’s a notable shift inward — toward the energy of the city itself.
Inside, the focus is on thoughtful spaces rather than grand gestures. An infinity pool and wellness center form the core of the guest experience, while public areas flow between indoor and outdoor settings. The property was conceived to feel both worldly and rooted, marrying urban design language with Caymanian sensibility. It’s an intentional move to give George Town what it hasn’t had before: a place where the city can breathe as a destination, not just a gateway.
The culinary program at ONE | GT is central to that vision. The French-Mediterranean–inspired Perle will anchor the hotel with an elegant, whitewashed dining room. Byū brings contemporary Asian-fusion flavors, and Café Bellini leans into Italian classics with a Caribbean edge. Together, they’re designed to position the hotel not just as a place to stay, but as a place to gather.
The timing is significant. For years, George Town has been a day-trip city — a place to pass through on the way to the beach or the airport – or a great cruise stop. ONE | GT aims to change that dynamic. By introducing a true luxury hotel into the urban core, it creates a new point of entry for travelers who want to experience Cayman beyond the shoreline.
Reservations are now open for April 2026, with limited early stays expected to become available in the months ahead.
As for prices, I found rates of $536 per night starting April 1, 2026 on the hotel’s website. That’s pretty competitive for the destination, based on what I’ve seen in recent years.
