This Anguilla Resort Has New Dining, a Beach Café, and a Reimagined Oceanfront Escape
Aurora Anguilla Resort & Golf Club is entering the new season with a slate of additions that further define its position as one of the region’s leading luxury resorts. The Anguilla property has introduced a new Mediterranean restaurant, reopened its Merrywing Beach enclave, launched a family-friendly café, and added themed dining events at its signature beachfront restaurant.
The resort’s newest restaurant, Sole di Mare, brings a Mediterranean sensibility to Anguilla, with dishes influenced by the coasts of France, Greece, Spain, and Morocco. The menu features handmade pastas, pizzas, and locally sourced ingredients from the resort’s hydroponic farm. The restaurant overlooks the Merrywing Pool, with sweeping views of the sea and neighboring Saint Martin.
Aurora has also reopened its Merrywing Beach area, an oceanfront enclave with direct access to the family pool and nearby restaurants including Breezes, Tokyo Bay, and D. Richard’s Steakhouse. The return of Merrywing Beach expands the resort’s range of accommodations and beachfront experiences.
The debut of Merrywing Café adds a casual new space for guests, serving pastries, ice cream, and coffee throughout the day. The café complements the resort’s growing culinary footprint, offering a relaxed option for families and guests on the go.
Beginning Nov. 15, Breezes will host Saturday Mexican Nights, a weekly beachfront event featuring regional dishes, tropical cocktails, and live entertainment.
