This Belize Resort Just Opened a New Cocktail Bar

A new cocktail bar has opened at a top resort in Belize, adding a fresh culinary — cultural — dimension to the guest experience. And it’s all about math.

The new bar, called Arlie’s, is named in honor of Arlie Petters, a Belizean-American mathematician and professor at Duke University.

Petters, who also holds appointments in physics and economics, is widely recognized for his groundbreaking academic work and contributions to science.

And the bar is contributing to, well, a great time.

Arlie’s features a cocktail program built around what the resort calls classic techniques and locally inspired flavors.

The bar offers a “refined yet relaxed” setting, with a menu of signature drinks that showcase Belizean ingredients—from tropical fruit infusions to house takes on beloved classics like the Negroni.

Among the highlights is the “Welcome to Belize,” an artisanal cocktail blending local rum with native fruits.

Of course, you can also go for one of Belize’s fine local rums.

The opening of Arlie’s adds to the resort’s growing position as a spot for elevated food and beverage experiences in Ambergris Caye. Of course, if you want to check out bars, Ambergris Caye is the right place, a destination unique for what we’ve called its “overwater bars.”

Rooms at Alaia start at $434 per night. The property is part of Marriott’s Autograph Collection.
