Atlantis Paradise Island Just Unveiled a Wave of New Eateries, Including a Thai Pop-Up by a Global Star Chef

It’s already home to more restaurants by Michelin-starred chefs than anywhere else in the whole Caribbean. Now Atlantis Paradise Island is upping its culinary game yet again, fresh off the third edition of its Nassau Paradise Island Wine and Food Festival. 

Paradise Island’s signature resort  is expanding its culinary offerings with a slate of new restaurants and dining experiences rolling out this spring and summer, some of which are already open. 

So what’s new at Atlantis? 

The Bahamas resort has announced the debut of several new concepts, including two full-scale restaurants, a summer dinner pop-up from a globally renowned chef, and expanded beachfront dining options—part of a wider refresh of its already outstanding culinary portfolio, something we enjoyed on our recent visit to the resort, including new additions like Michael White’s Paranza and the new Mediterranean-inspired Silan inside the Atlantis Casino. 

Claudio’s Bahamas Is Opening This Month, With a Taste of Greenport

Set above the Water’s Edge Lagoon, Claudio’s Bahamas will mark the first international outpost of the popular Claudio’s waterfront restaurant in Greenport, New York. Designed with nautical flair—complete with colorful fiberglass sailboats named after Caribbean cocktails—the restaurant will offer indoor and outdoor seating with sweeping views of Atlantis’ Royal Towers.

The menu is seafood-focused and family-friendly, with dishes like Conch Fritters, Cracked Lobster, and Tuna Tartare Nachos. The cocktail list includes Caribbean-inspired drinks like the Coral Sands and Junkanoo Punch. Claudio’s will be open from breakfast through late-night dining.

Cocodrilo Now Serving Coastal Mexican Fare

Already open to guests, Cocodrilo is a cantina-style restaurant located between The Coral and The Royal at the Lagoon Bar & Grill. The eatery blends a vibrant, laid-back setting with coastal Mexican cuisine. Dishes include Blackened Shrimp Tostadas, Avocado Salad, Conch Ceviche, and Grilled Mahi-Mahi. Cocktail highlights include the Cantarito with tequila and grapefruit soda, and the Komos Elderflower Spritz topped with prosecco.

Chef Ian Kittichai’s Thai Pop-Up at The Cove

Coming in May, Atlantis will host Kò Sà-Wăn, a limited-time dinner pop-up at The Cove’s Perch restaurant. Thai chef Ian Kittichai—known for his Bangkok flagship Issaya Siamese Club and appearances on MasterChef Thailand and Iron Chef USA—will showcase bold Thai flavors with a curated family-style menu. Signature dishes include Tom Yum Goong soup, grouper steamed in banana leaf, and green curry short ribs, along with Thai-inspired cocktails like a Coconut Lemongrass Martini.

Sunset Point Debuts at Harborside Resort

Also now open is Sunset Point, a casual outdoor restaurant at Harborside Resort. Overlooking Nassau Harbor, the venue features coastal small plates like Bahamian Snapper Skewers, Island Watermelon Salad, and Creamy Jerk Spiced Dip. Open for all-day dining, it’s positioned as a relaxed spot to enjoy a cocktail and catch the sunset.
