Chef Michael White’s Second Caribbean Eatery Will Be in Puerto Rico

It began with the debut of Paranza, the eatery at The Cove at Atlantis in The Bahamas that instantly found its way onto the list of the 50 Best Restaurants in the Caribbean

Now, renowned Michelin-starred Chef Michael White is adding another eatery in the region, this time in San Juan, Puerto Rico: Levant, a new Mediterranean concept set in the La Concha resort, which is joining Marriott’s Autograph Collection. 

While Paranza is focused on Italian fare, Levant will have a broader regional inspiration. The menu will feature flavors from Italy, Greece, Spain and beyond, joined by a Mediterranean-focused wine list and a curated cocktail menu. 

The restaurant will be set inside La Concha’s iconic La Perla building, the famous structure designed like a seashell right on the edge of the water in San Juan’s Condado district. 

“Our vision for Levant was to create a restaurant where guests and locals can savor the authentic tastes of the Mediterranean while enjoying the beautiful beachfront setting of La Concha Resort,” said Rolando Padua, President of Paulson Puerto Rico, in a press release. “The addition of Levant marks a significant step in the evolution of La Concha Resort into an Autograph Hotel, aligning with a collection of distinctive and meticulously curated hotels designed to make a lasting impact and marking the first of its kind in Puerto Rico. We are confident that our visitors will be enchanted by the restaurant’s décor, lively ambiance, and exceptional culinary selections. This notable expansion solidifies La Concha’s reputation as a top-tier destination, consistently raising the bar for elegance and outstanding hospitality.”

The eatery is designed by Celano Design Studio, with a look that gives a nod back to the 1950s era when La Concha first opened its doors. 

The building itself recently underwent a renovation as part of the hotel’s shift to the Marriott portfolio. 

Levant will join existing eateries at the resort including the hand roll-focused Tekka Bar (most famous for its Las Vegas outpost.
