Air France Taps Michelin-Star Chefs for Premium Cabins

Air France is improving its already-top-level cuisine in business and first class.

The carrier has announced that it will be offering new dishes designed by Michelin-starred chefs Regis Marcon and Guy Martin in La Premiere and business class, respectively for the next three months.

Marcon, a triple-starred chef, will b designing dishes for the next three months in La Premiere, the carrier’s first-class cabin, with new dishes like Scallops, roast lobster and Julienne vegetables, Duck pâté en croûte and others.

Martin, who has received two Michelin stars, will be designing chefs for long-haul and select medium-haul flights from Paris in business class, with dishes like Cod, basmati rice with curcuma, mashed courgette with cashew nuts, coconut sauce fragranced with Espelette pepper; Veal chuck chop with fried wild mushrooms, artichoke puree and organic beetroot and blackcurrant sauce and Roast breast of guinea fowl, carrot and cardamom puree, organic red quinoa risotto and  cranberry juice among others.
