A Ghostly Cocktail from Jumby Bay

With Halloween coming up, one of the Caribbean’s leading resorts, Jumby Bay, A Rosewood Resort, has unveiled a cocktail inspired by a local ghost.

It’s called Sam’s Cocktail, inspired by the Antigua resort’s resident “Jumbie,” the Antiguan term for spirits of people who have been trapped in a state of limbo or purgatory.

According to local legend, Sam Payne is a Jumby who likes to hang around the resort’s Estate House.

The cocktail will put you at ease, however, with a mix of rum and some sweet spices and treats.

Here’s how to make it.

Sam’s Cocktail

Ingredients:

Spiced rum, with its notes of cloves, allspice, and vanilla, is complemented by comforting fall flavors of spicy cinnamon, sweet, rich maple syrup, and warming apple cider.

Ingredients

2 oz. spiced rum(English Harbour Antiguan Rum)

12 oz. maple syrup

14 oz. freshly squeezed lime juice (about half a lime)

14 oz. apple cider

18 tsp. ground cinnamon

1 stick cinnamon, for garnish

Method: 

In a shaker, add all the ingredients, except for cinnamon stick, along with 12 cup of ice, shake vigorously to dissolve ground cinnamon, and pour mixture along with ice into an old-fashioned glass to serve. Garnish with a cinnamon stick.
