Tasting summer at St Lucia’s Calabash Cove

August is National Rum Month, so to celebrate we’ll be featuring a series of rum recipes from resorts around the Caribbean.
First up: St Lucia’s Calabash Cove resort, where bartender Chris Ingles serves this colorful cooler at the pool bar to rave reviews. It’s a festive and fruity way to welcome rum’s special month and to celebrate the Eastern Caribbean nation all year long.
Calabash Cove’s Summer Scene
Ingredients
1 ounce mango juice
1 ounce pineapple juice
½ ounce lime juice
1 ounce light rum
¼ ounce blue Curaçao (or to color desired)
ice
METHOD
Pour ingredients into a cocktail shaker filled with ice. Shake, strain, garnish and serve. (If serving cocktail outside, add a few ice cubes to keep the drink cool.)
