Rum Journal: Recipe for a Jamaican Watermelon Cooler

While we’ll never say no to a cramping-cold island brew, sometimes we’re in the mood for something more fruity, less filling. Enter Rockhouse’s rummy watermelon cocktail, the perfect accompaniment to afternoons spent swimming leisurely laps in the Negril, Jamaica boutique resort’s cliff’s-edge pool. Step aside, Red Stripe; there’s a new refresher in town.

Watermelon Cooler

Ingredients
1 ounce homemade pineapple-ginger syrup (see recipe below)
3 ounces watermelon juice
2 shots Appleton white rum
splash of lime

Method

Blend all ingredients together. Pour over ice. Enjoy.

Pineapple-Ginger Syrup
1 ounce fresh ginger root
¼ of a pineapple
2 cups water
brown sugar
Blend ginger, pineapple and water together; strain and sweeten to taste with brown sugar.
