Rum Journal: The Signature Cocktail at the Atlantis Resort’s Moon Club

In the Bahamas, the Atlantis resort’s Moon Club has a signature cocktail, appropriately named the Moon Club Mojito. The libation isn’t lunar-themed, however; it’s a reference to the Moon jellyfish that float dreamily in a tank spanning the length of the bar in the plush casino club.

All the same, if you make yours strong enough, who knows: you just might see stars.

Moon Club Mojito

Ingredients

2 oz. Bacardi Black Razz

1.5 oz. simple syrup

club soda

raspberries

3 lime wedges

10-12 mint leaves

Method:

In a highball glass, lightly muddle raspberries and simple syrup then add mint leaves (remembering to “slap” the mint leaves before adding). Fill the glass with crushed ice and rum. Stir well. Squeeze lime wedges and drop into drink, and then add a splash of club soda. Garnish with mint leaves.
