Aug. 16 is National Rum Day in the US, a holiday we continue to believe should be made an international holiday. Whether you’re in the US or not, make Saturday your own Rum Day with one of these rum cocktail recipes from across the Caribbean.

The Rosa Palopo is the Casa Palopo’s hotel’s ignature drink, best enjoyed when paired with the boutique hotel’s unparalleled views of Lake Atitlan and the volcanoes across the shore.

Ingredients:
2 oz Zacapa Rum 23
5 oz fresh watermelon puree
2 oz hibiscus water (made with hibiscus extract)
1 tbsp sugar
squeeze of fresh lime juice

Method:
Mix all ingredients in a shaker and pour over ice; garnish with a slice of lime.
