MIAMI — It’s a cornucopia of colours: green breadfruit, brown cassava, yellow peppers.
And the ingredients on this table will decide the best chefs in the Caribbean.
Around 50 of the Caribbean’s best chefs have congregated in Miami this weekend for the Caribbean Hotel & Tourism Association’s Taste of the Caribbean competition and festival.
The event has brought together culinary teams from Anguilla to Suriname to showcase their talents in making pastries, mixing cocktails and perfecting regional food.
“Eveybody seems to be representing their country well,” said US Virgin Islands chef George Sittig, who will be competing in a cheesecake competition. “It’s one of the times that we can all get together and do something like this – to see what trends are going on. Without it, there would be no communication.”
The event, which is being held at the Hyatt Regency in downtown Miami, will name the best of each category on Saturday, including the coveted Chef of the Year.
