Rum Journal: A Jamaican Recipe For a Sunday Afternoon

IT’S A CALM, spring Sunday — a perfect time for a rum cocktail.

In this inaugural edition of Sunday Rum Journal, we bring you an easy way to bring paradise to you, whether within the Caribbean or without, courtesy of Jamaica’s Hampden Estate.

The Trelawny-based Hampden Estate was founded in 1753, and specializes in Heavy Pot Still Rums.

Hampden produces a number of rums, emphasizing traditional Jamaican rummaking: primarily the excellent overproof Rum Fire, and the very solid Hampden Gold.

It’s the latter that provides the key ingredient for Hampden’s Paradise Cocktail:

2 oz Hampden Gold
1/2 oz Strawberry Syrup
4 oz Pineapple Juice
Pineapple Wedge

Fill a rock glass with crushed ice, pour strawberry syrup into the bottom of the glass and slowly top up with pineapple juice. Garnish glass with pineapple wedge.
