The Hotel Le Toiny in St Barth has unveiled a new look at its Restaurant Le Gaiac, following million-dollar renovation.

The refurbishment, which began in May, was the first for Restaurant Le Gaiac since its opening in 1992. It involved updates to all interior and exterior spaces, including the restaurant’s pool. Floors were also redone in natural beige limestone, and the pool was lined in lava stone.

Le Gaiac additionally created a small sitting area with a library, business centre and upgraded bar, along with a “Family Table” aimed at encouraging joint dining among guests.

In 2011, Le Toiny, which was the first Relais & Chateau property in the Caribbean to receive a “Grand Chef” distinction, refurbished the hotel’s private terraces and pools.

The hotel, which has 15 recently-updated Villa Suites, is located on a 38-acre parcel on the southeastern side of St Barth.

Hotel Le Toiny has also welcomed a new restaurant manager, Pierre Grall, who was formerly the Maitre D’ for Alain Ducasse at the Essex House in New York. (Grall also has experience managing Relais & Chateaux Grand Chef restaurants including the Thomas Henkelmann-led Homestead Inn in Connecticut).
