Chef Michael Schwartz Creates New Pub Concept For Royal Caribbean

James Beard Award-winning Chef Michael Schwartz has designed a new pub concept for Royal Caribbean as the company’s newest “experience advisor.”

The new pub, Michael’s Genuine Pub, which will feature Schwartz’s “Michaels Genuine Home Brew” beer, will debut as what the company is calling the first-ever “gastropubs at sea.”

“We are very much looking forward to continue working with Michael in his new role a a Quantum Experience Advisor, where he will help us deliver culinary ‘wows’ aborad Quantum of the Seas and Anthem of the Seas,” said Lisa Lutoff-Perlo, executive vice president of operations at Royal Caribbean International. “Michael’s culinary philosophy will be a perfect complement as we work together to serve up never-before dining experiences at sea aboard the Quantum class.”

Schwartz will also design onboard experiences for guests, including food and beverage pairings and other programming.

The Chef is best known for his flagship eatery, Michael’s Genuine Food and Drink in Miami’s Design District. He opened a Michael’s Genuine in Grand Cayman’s Camana Bay in 2010.

Schwartz has previously designed seasonal tasting menus for Royal Caribbean’s Oasis-class restaurant, 150 Central Park.

Quantum of the Seas will make its inaugural voyage in November.
